The other side
A word arrives with its sounds attached. Someone who learned gnocchi in an Italian kitchen, or from a grandmother, says it the way it was said to them, and flattening it takes deliberate effort. The flattening is the performance. Bilingual mouths switch without asking permission. Accuracy costs nothing. Demanding the anglicised version asks people to hide where they learned to eat and speak.
